Grilled Rosemary-and-Honey London Broil

Ingredients

1/4 cup soy sauce
3 tablespoons honey
2 tablespoons apple cider vinegar
1/4 cup fresh lemon juice
1 teaspoon garlic powder
1 teaspoon freshly ground ginger
1 tablespoon ground rosemary leaves
1/2 teaspoon dry mustard
1/4 cup vegetable oil
1 finely chopped green onion

2 pounds London broil steak
Salt and freshly milled pepper

Instructions

Mix together all of the ingredients for the marinade. Score the meat crosswise. Place the steak in a shallow pan and season with salt and pepper. Coat with the marinade on both sides and place in the refrigerator for 8 hours.

Grill the steak 2 to 3 inches from the heat, basting with the marinade either on an outdoor cooker or oven/broiler. Cook about 5 to 6 minutes per side and then test for desired doneness by cutting in the middle. When the steak is finished, cut it on the diagonal into 1/2-inch-thick pieces and serve. Yield: 4 servings.
