Watercress tea sandwiches are among the classic tea sandwiches. But with the bite of the watercress, you'll find these are more appealing for an adult tea party than for a child's tea party. Add goat cheese to the formula and you have a sophisticated sandwich that mixes creaminess and crunch. The pecans around the edge add flavor, texture and a fancy, party look that makes this more than a lunchbox sandwich.

Yield: 4 small triangle tea sandwiches
Ingredients:
- 4 small slices cinnamon raisin bread, ends trimmed
- 2 teaspoons salted butter, softened
- 2 ounces goat cheese, room temperature
- 1/4 cup watercress leaves picked off stems, plus extra sprigs for garnish
- 1/4 cup toasted pecans, chopped
Preparation:
Divide the goat cheese into four portions and spread one portion onto each trimmed slice of cinnamon raisin bread. Divide watercress leaves into two portions and place on top of two slices of the bread, and cover with the other un-topped slices. Spread the softened butter around each sandwich. Cut each sandwich into two triangles.
Place chopped nuts on a plate. Dip the two buttered sides of each triangle into the nuts to coat. Place on serving dish and garnish with watercress sprigs.
