Asparagus, Prosciutto and Boursin Tea Sandwich

These hearty, savory tea sandwiches will never make you want to lift a pinky finger at your tea party. But they will fill the appetite holes left by the dainty cucumber sandwiches.

Prep Time: 15 minutes

Cook Time: 3 minutes

Total Time: 18 minutes

Yield: 12 half size sandwiches


  • 24 long asparagus spears, tough ends trimmed
  • 12 slices prosciutto
  • 1 5.2 ounce package of Boursin cheese
  • 12 slices of hearty whole grain bread


Bring pot of water to boil. Cook asparagus for three minutes, then remove immediately and cool with cold running water. Dry well with paper towels. Cut each spear in half horizontally.

Trim the bread slices. Spread one tablespoon of boursin cheese on each slice of bread.

Cut prosciutto slices in half. Wrap each asparagus half with a half slice of prosciutto.

Place 4 spears of wrapped prosciutto on each of 6 slices of trimmed bread. Cover each one with another slice of bread.

Cut each sandwich in half.
