Award-winning vegetarian chef Peter Berley sets out in this cookbook to make vegetarian dishes less intimidating and easier to prepare for home chefs. In reality this may be impossible to do all the time. When you cook with fresh ingredients, there's still a fair amount of washing and chopping to do to prep your ingredients. Cooks who are looking for 15 minute vegetarian dishes shouldn't bother with these recipes. But for someone who is committed to using fresh vegetables and fruits in creative ways despite a little extra effort, this book won't let you down. Berley works very hard to make sure none of the dishes require advance steps. As long as you're prepared to hit the kitchen and work for the next hour, you'll have a delicious fresh meal ready when you're done. For some recipes you will need access to a store that carries specialty vegetarian ingredients. But overall, the results will be worth the effort and cooks seeking to add more vegetarian dishes to their collection will be delighted with the selection in this book.
