Boursin Stuffed Tomatoes with Pistachio Nuts

These little bites are especially good when cherry tomatoes are in season. I flipped the tomatoes over so they could sit on the flat top. Next, I cut a small hole in the flipped up bottom using a paring knife. I filled a small plastic storage bag with boursin cheese and cut a small hole in the corner. I used the bag to pipe the cheese into the tomato. Finally, I dipped the tomato into chopped pistachio nuts and served.
