Stuffed mushrooms are one of our favorite appetizers. Stuff them with a creamy filling of garlicky cheese and they become addictive.

Yield: 16 stuffed mushrooms
Ingredients:
- 16 fresh, large, button mushrooms
- 1 tbsp olive oil
- 1 large clove garlic, minced
- 4 oz cream cheese, softened
- 1/4 cup grated pecorino cheese
- 2 tbsp minced parsley
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp crushed red pepper (optional)
Preparation:
Preheat your oven to 350 degrees. Grease baking dish with olive oil.
Clean mushrooms by rubbing with a damp paper towel. Trim stems, then break off stems and chop. Place mushroom caps in baking dish.
Heat olive oil in medium pan over medium heat and add mushroom stems and chopped garlic. Saute until garlic softens and stems begin to release liquid. Cool in a bowl for 5 minutes.
Add all other ingredients to bowl and mix well. Fill mushroom caps with cream cheese mixture.
Bake for 20 minutes until filling is hot and mushrooms begin to soften.
Serve hot.
