For a relaxed party, prepare and plan ahead as much as possible. For example, pick out four great oven dishes that will fit in the oven at the same time. The week before your party, prepare 4 separate hot recipes that you can freeze. Defrost your dishes prior to your party, reheat and serve. This eliminates any pots and pans and general mess in the kitchen at the dinner party. Similarly, decide which cold dishes can be made a day or two before the party. Prepare and refrigerate them.
