How often do you find yourself preparing a recipe for a large batch of cookies, when you will only need a few dozen for current entertaining purposes? I know that when I do that, dozens of unnecessary cookies are sitting around my kitchen just tempting us to eat them when we really shouldnt! So I've changed my approach, and now I only bake the number of cookies I really need for my party. What's left is a great shortcut for future entertaining.

I take a large cookie sheet and cover it in wax paper. Then I scoop out the remaining cookie dough onto the cookie sheet. I place the sheet into my freezer for approximately an hour until the dough has firmed up enough that the cookies won't stick together. Finally, I transfer the chilled dough scoops into a freezer bag and return it to the freezer. I then have a supply of cookies for anytime a guest drops in unexpectedly. All I have to do is pop the dough onto a cookie sheet and bake for approximately one or two minutes more than the original recipe required (you'll need to test a cookie to find out the best timing for your oven). There's nothing better than freshly baked cookies straight from the oven. Don't you agree?
