Rosemary Roasted Potatoes - Submitted by Kimberly

"I have been in a birthday club with 5 friends for over 15 years. Six times a year we get together for dinner, dessert, and presents for the birthday girl. We've seen each other through a lot of changes in that time, but the constant tradition of "our" time together is priceless. The hostess decides on the menu theme and each person brings part of the meal or dessert. This side dish has been going over well lately. We have eaten it with gourmet hamburgers as well as Mediterranean chicken."

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients:

  • Red or russet potatoes
  • Olive Oil
  • Purple Onion
  • Pepper
  • Kosher Salt
  • Fresh Rosemary

Preparation:

Simply cube red or russet potatoes and toss with olive oil, kosher salt, and pepper. Toss thin slivers of purple onion to taste with the potatoes, oil, and seasoning. Roast at 375 on a foil-lined cookie sheet for approximately 45 minutes, or until somewhat crispy. During the last 10 minutes of cooking time, add chopped fresh rosemary to the potatoes. These can be made at home and then taken to the party for a side dish. They don't have to be hot, but you can put them in the warmer to bring them back.
