A classic tea sandwich with a little extra bite.

The dried oregano and green onion in these tuna salad tea sandwiches make them flavorful. The crunch from the celery in these sandwiches make them irresistible. These won't be your ordinary soggy tuna sandwiches.

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 16 small triangle tea sandwiches

Ingredients:

  • 4 small slices whole grain bread, ends trimmed
  • 1 can solid light tuna packed in oil
  • 3 tablespoons mayonnaise
  • 1/2 small stalk celery finely chopped
  • 1 top from green onion, diced
  • 1/2 teaspoon dried oregano
  • pinch cayenne pepper
  • salt and freshly ground black pepper to taste

Preparation:

Break up tuna with a fork into smaller chunks. Mix in mayonnaise, celery, green onion, oregano, and cayenne. Taste and add salt and pepper. Mix again.

Divide tuna mixture into four portions and spread each portion onto one slice of bread. Top each portion with another slice of bread. Cut each sandwich into four triangles. Serve.
