Yield: 4 small tea sandwiches
- 2 small slices brown bread, ends trimmed
- 1/2 cup diced cooked chicken
- 2 tablespoons mayonnaise
- 1 tablespoon chopped celery
- 1 tablespoon minced fresh tarragon
- salt and pepper to taste
Mix together the diced chicken and mayonnaise. Stir in the chopped celery and tarragon. Add salt and pepper to taste. Spread chicken salad on one slice of bread, top with the other slice and gently press together. Make a vertical and horizontal cut across sandwich to make four small square tea sandwiches.
