Type of Cheese:

Made from cow's milk. Can be made from part-skim or whole milk, and can be aged from a few weeks to over a year.

Texture:

Hard.

Rind:

Usually a yellow, wax rind.

Tasting Notes:

A mild, nutty, creamy cheese with a piquant aroma.  I tasted a Gouda Gold, and it was so creamy that it almost tasted like butter.

Wine Pairing:

Pair with a light fruity wines, beer and ales.

Serving Suggestions:

This cheese is great for eating with crackers and fruit. It also substitutes well for cheddar in macaroni and cheese recipes. The Dutch make a gouda fondue called kaasdoop with this cheese.
