Enlightened Guacamole

This light version of guacamole has the added benefit of holding it's fresh color and flavor for several days.

1 1/2 cups plain, nonfat yogurt
2 small ripe avocados, peeled, pitted and cubed
1/4 cup green onions
1/3 cup chopped fresh cilantro
1 teaspoon fresh lemon juice
1/4 teaspoon ground cumin

tortilla chips or vegetables for dipping

  1. Line colander or strainer with cheesecloth or double layers of strong paper towels. Set over a bowl. Add yogurt to colander and allow to drain in refrigerator at least 2 hours. Discard liquid.
  2. Place yogurt in food processor. Add avocado and next 4 ingredients and puree until smooth.
  3. Season with salt and pepper to taste.
  4. Can be prepared ahead and refrigerated overnight.
