Chocolate Cinnamon Shortbread 

Very rich, and subtle shortbreads. These go very well with a good cup of coffee or glass of milk.

1/2 pound unsalted butter
1/2 cup sugar
2 ounces semisweet chocolate
1/2 teaspoon cinnamon
2 cups all-purpose flour

  1. Preheat to 300ºF.

  2. Melt chocolate in top of double boil, stirring frequently. Remove from heat and cool slightly.

  3. Beat butter and sugar at medium speed until fluffy and well-blended.

  4. Mix together flour and cinnamon.

  5. Add flour and chocolate to butter mixture. Mix until well-blended.

  6. Press evenly into 13"x9" baking pan.

  7. Bake in center of oven until top is firm and toothpick inserted in center comes out clean, approximately 40 minutes.

  8. Cool on rack until slightly warm. Cut into bars.

Makes 15 bars.
