Country and Region of Origin: Castillian-Leonesa plateau of Spain

Type of Cheese: An aged cheese made with raw ewe's milk

Texture: Firm, grates easily

Rind: Dark grey/brown with an engraved pattern similar to Castellano or Manchego

Tasting Notes: Full flavored, buttery, slightly piquant with a nutty aftertaste

Wine Pairing: Pair with a full-bodied red or white wine, or with a sherry for a dessert course.

Serving Suggestions: This delicious cheese can be enjoyed on its own with crackers, olives and a good bottle of wine. It can also accompany grilled or roasted meats, burgers and salads. Melts easily when grated, and makes a zesty addition to omelets.
