Type of Cheese: A fresh, cow's milk cheese.

Texture: Soft, but still can be grated with a large hole grater.

Rind: None.

Tasting Notes: A mild, slightly salty cheese 

Wine Pairing: Serve this young, milky cheese with a light, fruity wine such as Sauvignon Blanc or Pinot Noir. Or add a little extra Mexican flair, and serve it with a Sangria.

Serving Suggestions: The beauty of this cheese is that when heated, it softens but doesn't melt. That's why it makes a creamy addition to recipes, and is often used as a topping for spicy Mexican dishes such as enchiladas and empanadas.
