Country and Region of Origin: Holland

Type of Cheese: A pale-yellow, cow's milk cheese that has been aged for 20 weeks.

Texture: Semi-firm.

Rind: Golden and hard.

Tasting Notes: This cheese tastes like a combination of gouda and parmesan cheese, mellow, buttery and nutty. It retains the smooth texture of gouda, but has the nuttiness of parmesan. It melts well and isn't stringy in dishes.

Wine Pairing: Pair with older, robust reds or whites such as Cabernet Sauvignon, Zinfandel or Chardonnay.

Serving Suggestions: This interesting cheese makes a nice addition to a cheese board. It goes well with crackers, olives, grapes. Since it grates and melts so nicely, it would be an excellent addition to many cooked dishes, as well.
