Franche Comte region of France.

Type of Cheese:

A raw, cow's milk cheese that takes one to three months to mature.

Texture:

It's a creamy, semi-soft cheese.

Rind:

A gray brown colored rind.

Tasting Notes:

It's a buttery, pungent cheese with hints of fruit and nuts.

Wine Pairing:

Serve with a Beaujolais or Cotes du Rhone red wines or Sancerre and Muscadet white wines.

Serving Suggestion:

This cheese will make an interesting addition to any cheese board with the unusual dark stripe that runs through the yellow cheese. With its pungent flavors, it should be served with mild bread, crackers, nuts and grapes.
