Uncooked, pasteurized, pressed, cow's milk cheese.

Texture:

Semi-hard.

Rind:

Natural, hard, dry and yellow/orange to greyish that becomes pockmarked over time.

Tasting Notes:

Buttery, nutty, salty with slight after effect of spice.

Wine Pairing:

Pair with a sherry, port or other dessert wine.

Serving Suggestion:

Excellent addition to a cheese board both due to the strong color and the intense, rich flavor. When cubed it makes a good addition to a salad. Grates easily and can be incorporated into omelets and other cooked dishes.
