Don't Get Carried Away on the Buffet

I just attended a wonderful family party at a cousin's house this weekend. Everyone had a great time at this mini-reunion, and the food was tasty and plentiful. In fact, the food may have been too plentiful (we Italians tend to get carried away!) So here is the tip I took away from this event.

If you are hosting a buffet and there will be many items from which to choose, remember that everyone will only be tasting a little bit of each selection. For example, if there will be several salads such as pasta salad, potato salad, a vegetable salad and more (like we enjoyed yesterday), don't double any of the recipes. One pound of dry pasta cooked and turned into a salad will serve 10-15 people if there are four or five other salad choices on the buffet.

So unless you plan on cooking double just to save for your own use during the week ahead (Plan on Leftovers), save yourself the expense and the waste of cooking too much.
