Take a Tip from B&B's
I could never run a Bed & Breakfast - I hate getting up early in the morning. Just ask my kids. I'd be an awfully cranky hostess if I had to get up early each morning to serve my guests a nice breakfast.
On the other hand, I've learned some shortcuts from B & B's that help me provide a nice breakfast to weekend guests in my home without having to get up too early. One of the best tricks I've learned is to prepare breakfast casseroles the evening before that can sit in the refrigerator overnight, and simply be baked in the morning. These work well for egg casseroles, with or without meat, and for French toast recipes that bake up beautifully in the morning. I can throw these together quickly after everyone else has turned in for the evening, and while my energy is still strong. Then I can stumble out of bed in the morning, slip the casserole in the oven, and catch another 40 winks while it bakes.
