Christmas Eve Seafood for a Crowd

Recently, at my niece's Christening, I was asked for advice on the age-old Christmas Eve problem of how to prepare a large seafood meal for a crowd. In Italian households the hostess spends most of the night standing at the stove, frying up fish, and wearing herself out trying to prepare lots of fresh seafood for lots of people. There has to be a better way, right? Well, here are my suggestions for a Christmas Eve Seafood menu that will maintain the traditions while making it possible for the hostess to relax a little bit during this special dinner.
